Sometimes I stumble upon a new recipe I want to try with quinoa. It’s one of those things that have to be made right or it will be very bland.
The cheese really helps give it that salty flavour but I would recommend having this fresh. I had some right when I made it and the rest the day after for lunch and it wasn’t the same.
Ingredients (4 servings):
- 1 cup quinoa, rinsed
- 1 1/2 cups vegetable broth or water
- 2 cups broccoli, chopped
- 1 cup cheddar, shredded
- salt and pepper to taste
Mix in the cheese, let it melt and season with salt and pepper.
